Spicy Garlic Edamame

Ingredients

  • 1/2 teaspoon orange zest
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon toasted sesame seeds
  • Freshly ground black pepper, to taste
  • 1/4 cup reduced-sodium soy sauce or gluten-free soy sauce
  • 1/4 cup reduced-sodium chicken or vegetable broth
  • 1 tablespoon honey
  • 2 teaspoons canola or vegetable oil
  • 4 garlic cloves, chopped
  • 1 teaspoon grated ginger
  • 5 cups edamame in the pod

Method

  1. If using frozen edamame, microwave it in a microwave-safe bowl for 2 to 3 minutes, until thawed.
  2. Combine the orange zest, cayenne, sesame seeds, and black pepper in a small bowl.
  3. In a small saucepan over medium heat, bring the soy sauce, broth, and honey to a gentle boil. Cook for 5 to 6 minutes, until reduced by half.
  4. Meanwhile, heat a large nonstick skillet or wok over medium-high heat. Add the oil, garlic, and ginger and sauté for 30 to 60 seconds.
  5. Add the edamame and orange-spice mixture, tossing to coat evenly.
  6. Pour in the reduced sauce and cook for another 2 to 3 minutes, tossing, until the sauce thickens slightly and the edamame is hot.
