Mashed Potatoes

Ingredients

  • 2 pounds russet potatoes (about 4 medium), peeled and cut into 1-inch pieces
  • 1 teaspoon kosher salt, plus more as needed
  • 3/4 cup whole milk
  • 1/4 cup unsalted butter
  • Freshly ground black pepper
  • Freshly grated nutmeg, optional

Method

  1. Put the potatoes and 1 teaspoon salt in a large saucepan and cover with cold water. Bring to a boil, reduce to a simmer, and cook until fork-tender, about 10 minutes.
  2. Drain and return the potatoes to the pan. Shake them over medium heat for about 1 minute to remove excess moisture, then pass them through a food mill or ricer, or transfer them to a bowl for hand-mashing.
  3. Heat the milk and butter in the saucepan over medium-high heat until the butter melts and the milk is hot, then remove from the heat.
  4. Mash the potatoes into the warm milk mixture and stir to combine. Season with salt and pepper and add nutmeg if desired. Serve immediately.
