How to Cook Fresh Green Beans

- Kosher salt and freshly ground black pepper
- 1 pound fresh green beans
- 4 tablespoons unsalted butter, cubed
- 2 cloves garlic, minced
- Finely grated lemon zest, optional
Method
- Bring a large pot of generously salted water to a boil. Prepare a large bowl of ice water nearby.
- Trim the stem ends from the green beans. Boil the beans, stirring occasionally, until bright green and crisp-tender, 4 to 5 minutes.
- Drain the beans and immediately place them in the ice water. Once completely cool, drain and pat them dry.
- Warm the butter and garlic in a large skillet over medium heat for 1 to 2 minutes, keeping the garlic from browning.
- Stir in 3 tablespoons water and continue stirring for about 1 minute, until the sauce turns creamy and emulsified.
- Add the beans and toss until heated through, about 2 minutes. Season with salt and pepper and add lemon zest if desired.
