Green Peas with Cheese and Herbs

Ingredients
- 3 quarts water
- 1/2 teaspoon salt
- 1 pound fresh or frozen peas (about 3 cups)
- 2 tablespoons red wine vinegar
- 1 tablespoon minced shallot
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 3 tablespoons olive oil
- 2 teaspoons chopped fresh mint
- 2 teaspoons chopped fresh parsley
- 4 ounces ricotta salata, fontina, or Swiss cheese, cut into 1/4-inch cubes
Method
- Bring the water and 1/2 teaspoon salt to a boil in a covered saucepan.
- Add the peas and cook frozen peas for 1 minute or fresh peas for 3 to 3 1/2 minutes.
- Drain and immediately chill the peas in ice water, then drain again.
- Whisk the vinegar, shallot, kosher salt, and pepper in a mixing bowl. Slowly whisk in the olive oil.
- Stir in the peas, mint, parsley, and cheese.
- Cover and refrigerate for 15 to 20 minutes before serving.
