Cilantro Lime Cauliflower Rice

Ingredients
- 1 medium head cauliflower (about 24 ounces), rinsed
- 1 tablespoon extra-virgin olive oil
- 2 garlic cloves
- 2 scallions, diced
- Kosher salt and black pepper, to taste
- 1 1/2 limes
- 1/4 cup chopped fresh cilantro
Method
- Remove the cauliflower core and let the florets dry completely.
- Working in two batches, pulse the florets in a food processor just until they resemble rice or couscous; avoid processing them into a paste.
- Heat the olive oil in a large sauté pan over medium heat. Cook the scallions and garlic for 3–4 minutes, until soft.
- Raise the heat to medium-high, add the cauliflower, cover, and cook for 5–6 minutes, stirring often, until tender inside and slightly crisp outside. Season with salt and pepper.
- Remove from the heat and toss with the cilantro and lime juice to taste.
