Ingredients

  • 1 head green cabbage, shredded
  • 1/2 head red cabbage, shredded
  • 1 tablespoon salt
  • 1/2 cup rice wine vinegar
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 1/2 teaspoon chile paste
  • 3 tablespoons creamy peanut butter
  • 1 teaspoon grated fresh ginger
  • 2 carrots, shredded
  • 1 cup bean sprouts
  • 4 scallions, cut thinly on the bias
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons sesame seeds, for garnish

Method

  1. Toss both cabbages together in a large colander. Sprinkle with the tablespoon of salt and let stand in the sink for 15 minutes to draw out moisture.
  2. Whisk together the vinegar, soy sauce, sesame oil, chile paste, peanut butter, and ginger.
  3. Toss the cabbage with the carrots, bean sprouts, scallions, and dressing.
  4. Season with salt and pepper and garnish with sesame seeds.
