The Best Turkey Meatloaf

Ingredients
- 1/4 cup olive oil
- 1 large onion, chopped
- 2 teaspoons fresh thyme leaves
- 1 teaspoon minced fresh sage
- Kosher salt and freshly ground black pepper
- 2 cloves garlic, grated
- 1 tablespoon tomato paste
- 3 tablespoons Worcestershire sauce
- 3/4 cup panko breadcrumbs
- 1/2 cup chicken broth
- 3 pounds ground turkey
- 2 large eggs
- 1/2 cup ketchup
Method
- Heat the oven to 450°F and line a baking sheet with foil.
- Warm the olive oil in a large skillet over medium heat. Add the onion, thyme, sage, 1 teaspoon salt, and 1/2 teaspoon pepper; cook, stirring often, until the onion softens, about 10 minutes.
- Stir in the garlic and cook for 1 minute. Add the tomato paste, cook for another minute, then mix in the Worcestershire sauce. Remove from the heat and let cool.
- Put the panko in a large bowl and pour the broth over it. Add the turkey, eggs, 2 teaspoons salt, 1/2 teaspoon pepper, and cooled onion mixture. Mix until evenly combined.
- Shape into a 10-by-5-inch loaf on the prepared pan and coat the top and sides with ketchup.
- Bake at 450°F for 10 minutes. Lower the oven to 350°F and bake about 45 minutes more, until the center reaches 165°F. Rest briefly before slicing.
