The Best Baked Salmon

Ingredients
- 2 tablespoons light brown sugar
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- Kosher salt and freshly ground black pepper
- 1/4 cup panko breadcrumbs
- 1/2 cup chopped parsley leaves
- 2 tablespoons unsalted butter, melted
- 1 1/2 pounds center-cut, skin-on salmon fillet
- 1 tablespoon Dijon mustard
Method
- Heat the oven to 425°F and line a baking sheet with foil.
- Combine the brown sugar, paprika, garlic powder, cayenne, 1 teaspoon salt, and a generous amount of black pepper.
- In a second bowl, combine the panko, parsley, melted butter, 1/4 teaspoon salt, and a few grinds of pepper.
- Put the salmon skin-side down on the foil. Spread Dijon over the top, press on the brown-sugar seasoning, then add the breadcrumb mixture.
- Crimp the foil into a low border around the fish. Bake for 15–18 minutes, until the crumbs are golden and the salmon is firm and flakes easily. Cut into four portions.
