Sunny's Easy 4-Ingredient Pulled Pork

Ingredients
- One 4- to 5-pound boneless pork shoulder (Boston butt), fat cap removed
- Kosher salt and freshly ground black pepper
- 2 tablespoons ground cumin
- Two 15.5-ounce jars salsa (mild, medium, or hot)
- 1/2 cup peanut butter
- 1/2 stick (4 tablespoons) unsalted butter
- 2 cloves garlic, minced
- One 24-ounce package prepared Yukon gold garlic mashed potatoes
- 2 scallions, thinly sliced
Method
- Sprinkle the pork butt generously with salt, black pepper, and about a tablespoon of the ground cumin. Place in a slow cooker.
- In a medium bowl, whisk together the salsa, peanut butter, and the remaining tablespoon of cumin. Pour over the pork in the slow cooker. Cook on low for 8 hours, or until fork tender.
- Remove the pork from the slow cooker and shred with two forks. Serve in bowls over the Garlic Mashed Potatoes, topped with a ladle of the cooking liquid from the slow cooker. Garlic Mashed Potatoes:
- Melt the butter in a medium pot over medium-low heat. Add the garlic and cook until fragrant, 2 to 3 minutes. Add the prepared mashed potatoes and mix to combine. Cook until heated through, about 5 minutes. Top with scallions and serve.
