Shrimp Boil

Ingredients
- 2 lemons, halved, plus wedges for serving
- 1/2 cup Old Bay seasoning
- 8 cloves garlic, smashed
- 1 large red onion, quartered
- 6 sprigs fresh thyme
- 1 pound baby red potatoes
- 4 ears corn, husked and halved
- 1 1/4 pounds large shrimp, unpeeled
- 2 tablespoons unsalted butter
- Optional hot sauce
Method
- Fill a large pot with 4 quarts water. Squeeze in the lemons and add the spent halves, Old Bay, garlic, onion, and thyme. Bring to a boil, then simmer for 5 minutes.
- Add potatoes and cook until nearly tender, about 10 minutes. Add corn and cook 5 minutes more.
- Devein the shrimp through the shells. Add them, cover, and cook 2 to 3 minutes, until curled and opaque.
- Transfer shrimp and vegetables to a bowl. Toss with butter and about 1 cup broth, then serve with broth, lemon wedges, and hot sauce.
