Salisbury Steak Meatballs

Ingredients
- 2 teaspoons olive oil, divided
- 1/2 cup minced onion
- 1/2 pound 93% lean ground beef
- 1/2 pound 93% lean ground turkey
- 1/3 cup seasoned whole-wheat breadcrumbs
- 1 large egg, beaten
- 2 tablespoons tomato paste, divided
- Kosher salt
- Pinch of black pepper
- 1 tablespoon all-purpose flour
- 1 teaspoon red wine vinegar
- 2 teaspoons Worcestershire sauce, or to taste
- 1/4 teaspoon mustard powder
- 5 ounces sliced mushrooms
- 1 1/4 cups reduced-sodium beef broth
- Chopped parsley, optional
Method
- Finely chop 1 ounce of the mushrooms. Heat 1 teaspoon oil using the Instant Pot sauté setting or a large pot over medium-high heat. Cook the onion until golden, 4 to 5 minutes, then divide it in half.
- Mix half the onion with both meats, the chopped mushrooms, breadcrumbs, egg, 1 tablespoon tomato paste, 1/4 cup broth, 3/4 teaspoon salt, and pepper. Shape into 20 meatballs.
- Whisk the flour with the remaining cup of broth. Stir in the other half of the onion, remaining tomato paste, vinegar, Worcestershire sauce, and mustard powder.
- For stovetop cooking, heat the remaining oil in a deep skillet. Brown the meatballs for about 2 minutes per side. Add the sliced mushrooms, 1/8 teaspoon salt, pepper, and sauce. Cover and simmer on low for 25 minutes.
- For slow-cooker cooking, brown the meatballs in a skillet, then transfer them to the cooker with the mushrooms, seasoning, and sauce. Cook on low for 6 to 8 hours.
- For pressure cooking, brown the meatballs in batches using sauté mode. Add the mushrooms, 1/8 teaspoon salt, pepper, and sauce. Pressure-cook on high for 10 minutes, then use either a quick or natural release.
- Garnish with parsley if desired.
