Pork Tenderloin with Salsa Verde

Ingredients
- One 1 1/2-pound pork tenderloin
- Kosher salt and freshly ground black pepper
- 2/3 cup plus 1 tablespoon extra-virgin olive oil
- 1 cup fresh flat-leaf parsley leaves
- 1/2 cup fresh cilantro leaves
- 1/4 cup white wine vinegar
- 1/4 cup chopped fresh chives
- 1/4 cup fresh tarragon leaves
- 3 shallots, sliced
- 2 garlic cloves
- Crusty bread, for serving
Method
- Heat the oven to 375°F. Season the pork. Heat 1 tablespoon oil in an ovenproof skillet and brown the tenderloin on all sides, about 5 minutes.
- Transfer the skillet to the oven and roast until just cooked through, about 15 minutes or until the thickest part reaches 150°F. Rest 5 minutes.
- Meanwhile, pulse parsley, cilantro, vinegar, chives, tarragon, shallots, and garlic in a food processor. With the motor running, slowly add the remaining oil; season with salt and pepper.
- Slice the pork, spoon salsa verde over it, and serve with crusty bread.
