Pork Tenderloin with Cherry Sauce

Ingredients
- 1/2 cup balsamic vinegar
- 1/2 cup less-sugar cherry preserves
- 1 1/2 teaspoons fresh thyme, chopped
- 1 1/2 teaspoons garlic powder
- 1 1/2 teaspoons kosher salt
- 1/4 teaspoon black pepper
- 2 lbs pork tenderloin (two 1-pound tenderloins)
- Olive oil spray
Method
- Preheat oven to 400°F. Trim and remove any silver skin from the pork tenderloin.
- Bring the balsamic vinegar to a boil, then cook over low heat until reduced to about 3 tablespoons, roughly 5 minutes. Stir in the cherry preserves and cook 1 minute. Remove from heat and stir in the thyme.
- Combine garlic powder, salt, and pepper; rub over the pork.
- Heat a cast iron skillet over medium-high heat and spray with oil. Brown the pork tenderloin on all sides. Spoon half of the glaze over the pork and transfer to the oven.
- Bake until the internal temperature reaches 145°F, 10 to 15 minutes depending on thickness; use a meat thermometer to confirm.
- Let rest, tented with foil, for 10 minutes before slicing into 12 slices. Spoon the remaining cherry sauce over the pork before serving.
