Pan-Seared Salmon with Kale and Apple Salad

Ingredients
- Four 5-ounce center-cut salmon fillets, about 1 inch thick
- 3 tablespoons fresh lemon juice
- 3 tablespoons olive oil
- Kosher salt
- 1 bunch kale, ribs removed and leaves very thinly sliced (about 6 cups)
- 1/4 cup dates
- 1 Honeycrisp apple
- 1/4 cup finely grated pecorino
- 3 tablespoons toasted slivered almonds
- Freshly ground black pepper
Method
- Let the salmon stand at room temperature for 10 minutes.
- In a large bowl, whisk the lemon juice with 2 tablespoons olive oil and 1/4 teaspoon salt. Toss in the kale and let it soften for 10 minutes.
- Thinly slice the dates and cut the apple into matchsticks. Add both to the kale with the pecorino and almonds, season with pepper, and toss.
- Season the salmon with 1/2 teaspoon salt and black pepper. Warm the remaining tablespoon of oil in a nonstick skillet over medium-low heat, then increase the heat to medium-high.
- Cook the salmon presentation-side down for about 4 minutes until golden. Turn and cook for about 3 minutes more, until firm to the touch.
- Divide the salmon and kale-apple salad among four plates.
