Oven-Baked Salmon

Ingredients
- 12-ounce salmon fillet, cut into 4 pieces
- Coarse-grained salt
- Freshly ground black pepper
- Toasted Almond Parsley Salsa, for serving
- Baked squash, optional
- 1 shallot
- 1 tablespoon red wine vinegar
- Coarse grain salt
- 2 tablespoons capers, rinsed
- 1 cup fresh flat-leaf parsley
- 1/2 cup toasted almonds
- Extra-virgin olive oil
Method
- Preheat the oven to 450°F.
- Season the salmon with salt and pepper. Place it skin-side down on a nonstick baking sheet or ovenproof nonstick pan.
- Bake until cooked through, about 12 to 15 minutes.
- For the salsa, mince the shallot, cover it with the vinegar and a pinch of salt, and let it sit for 30 minutes. Roughly chop the capers, parsley, and almonds and add them to the shallot mixture. Add olive oil to taste and adjust the seasoning.
- Serve the salmon with the toasted almond parsley salsa and optional baked squash.
