Mustard-Maple Roasted Salmon

Ingredients
- 2 tablespoons Dijon mustard
- 2 tablespoons finely chopped fresh cilantro
- 1 tablespoon light mayonnaise
- 2 teaspoons pure maple syrup
- Four 5-ounce skinless center-cut salmon fillets
- Kosher salt and freshly ground black pepper
Method
- Heat the oven to 400°F and line a rimmed baking sheet with foil.
- Mix the mustard, 1 tablespoon cilantro, mayonnaise, and maple syrup. Put the salmon on the baking sheet and season with 1/4 teaspoon each salt and pepper. Spread the mustard mixture over the fillets.
- Bake for 10 to 12 minutes, until just cooked through. Sprinkle with the remaining cilantro and serve.
