Miso Glazed Cod

Ingredients

  • 6 black cod or regular cod fillets (6 ounces each)
  • 1/3 cup low-sodium blond or white miso
  • 1/4 cup dark brown sugar
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons mirin
  • Toasted sesame seeds and sliced scallions, for garnish (optional)

Method

  1. Heat the broiler. Rinse the fish and pat it dry.
  2. Stir together the miso, brown sugar, sesame oil, and mirin until the sugar dissolves.
  3. Brush about 2 tablespoons glaze over each fillet and marinate for at least 30 minutes or up to 1 hour.
  4. Broil for 3 to 4 minutes, until the glaze is caramelized and lightly charred.
  5. Brush the fish with the remaining glaze, reduce the oven temperature to 375°F, and bake for another 5 to 6 minutes, until flaky but not overcooked.
  6. Garnish with sesame seeds and scallions if desired.
