Herb-Marinated Pork Tenderloins

Ingredients
- 1 lemon, zested
- 3/4 cup freshly squeezed lemon juice (4-6 lemons)
- 1/2 cup olive oil, plus 3 tablespoons for searing
- 2 tablespoons minced garlic (6 cloves)
- 1 1/2 tablespoons minced fresh rosemary
- 1 tablespoon chopped fresh thyme
- 2 teaspoons Dijon mustard
- Kosher salt and freshly ground black pepper
- 3 pork tenderloins (about 1 pound each)
Method
- Combine lemon zest, lemon juice, 1/2 cup olive oil, garlic, rosemary, thyme, mustard, and 2 teaspoons salt in a resealable plastic bag.
- Add pork tenderloins, coat thoroughly, seal, and refrigerate at least 3 hours or overnight.
- Preheat oven to 400°F.
- Remove tenderloins from marinade, discarding the liquid but keeping clinging herbs; season generously with salt and pepper.
- Heat 3 tablespoons olive oil in an oven-safe skillet over medium-high heat; brown tenderloins on all sides until golden.
- Transfer skillet to the oven; roast 10-15 minutes until internal temperature reaches 137°F at the thickest point.
- Transfer to a platter, cover with foil, and rest 10 minutes.
- Slice diagonally into 1/2-inch pieces, season with salt and pepper, and serve warm or at room temperature with pan juices.
