Classic Chicken Parmesan

Ingredients
- 2 skinless, boneless chicken breasts (about 10 ounces each)
- 1/4 cup plus 1 tablespoon extra-virgin olive oil
- 2 cloves garlic, finely chopped
- 1/4 teaspoon red pepper flakes
- 1 15-ounce can tomato puree
- 1/2 cup plus 2 tablespoons grated Parmesan cheese
- 1/4 cup finely chopped fresh basil
- 1/2 cup all-purpose flour
- Kosher salt and freshly ground black pepper
- 3 large eggs
- 1 1/4 cups grated mozzarella cheese (about 6 ounces)
Method
- Split each chicken breast horizontally into two cutlets. Place between plastic wrap and pound to 1/4-inch thickness.
- Warm 1 tablespoon oil in a saucepan over medium heat. Cook the garlic and red pepper flakes for about 1 minute. Add the tomato puree and 1 cup water, then simmer until slightly thickened, about 10 minutes.
- Stir 1/4 cup Parmesan and the basil into the sauce. Spread 1/2 cup sauce in a 3-quart flameproof baking dish and preheat the broiler.
- Season the flour with 1/2 teaspoon each salt and pepper in one shallow dish. In another, beat the eggs with 1/4 cup Parmesan.
- Heat 2 tablespoons oil in a large skillet over medium-high heat. Coat two cutlets in flour, then egg, and fry for 2–3 minutes per side until golden and cooked through. Move them to the baking dish; add the remaining 2 tablespoons oil and repeat with the other cutlets.
- Mix the mozzarella with the remaining 2 tablespoons Parmesan. Layer half the cheese over the chicken, followed by the remaining sauce and cheese. Broil until melted, about 2 minutes.
