Chicken and Broccoli Stir-Fry

Ingredients
- 1 pound chicken breast (about 2 breasts), cubed
- 3 scallions, white parts only, thinly sliced on the bias
- 2 tablespoons sugar
- 1 tablespoon dark sesame oil
- 1 tablespoon dry sherry
- 1 tablespoon soy sauce
- 2 garlic cloves, minced
- 1-inch piece peeled fresh ginger, minced
- 1 tablespoon plus 1 teaspoon cornstarch
- Kosher salt and freshly ground black pepper
- About 1/3 cup water, plus 2 tablespoons as needed
- 3 tablespoons vegetable oil
- 5–6 cups broccoli florets and sliced stalks, kept separate
- 3/4–1 teaspoon red chile flakes, optional
- 1 tablespoon hoisin sauce
- Toasted sesame seeds, optional
- Jasmine rice, optional
Method
- Toss the chicken with the scallions, sugar, sesame oil, sherry, soy sauce, half the garlic and ginger, 1 teaspoon cornstarch, and 1 teaspoon salt. Marinate at room temperature for 15 minutes.
- Mix the remaining tablespoon of cornstarch with 1/3 cup water and set aside.
- Heat 1 tablespoon vegetable oil in a large nonstick skillet over high heat. Stir-fry the broccoli stalks for 30 seconds, then add the florets, remaining garlic and ginger, 2 tablespoons water, 1/4 teaspoon salt, and black pepper. Cook for about 2 minutes and transfer to a plate.
- Reheat the skillet with the remaining 2 tablespoons oil. Add the chicken and optional chile flakes; stir-fry for about 3 minutes, until lightly browned and no longer raw-looking.
- Stir in the hoisin, return the broccoli, and add the cornstarch mixture. Boil briefly to thicken, adding water if needed. Adjust the seasoning and serve with sesame seeds and rice if desired.
