Baked Chicken Breast (Juicy, High-Protein Recipe)

Ingredients
- 4 boneless, skinless chicken breasts (6 ounces each)
- Kosher salt (Diamond Crystal recommended; use less if using Morton or table salt)
- 3/4 teaspoon garlic powder
- 1/2 teaspoon dried parsley
- 1/2 teaspoon paprika
- 1 1/2 tablespoons mayonnaise
- 1/3 cup seasoned panko breadcrumbs or gluten-free panko
- 2 tablespoons shredded Parmesan cheese
- 1 lemon, cut into wedges
- Olive oil spray
Method
- Pound the thick ends of the chicken breasts so each piece has an even thickness.
- Dissolve 1/4 cup Diamond Crystal kosher salt in 6 cups water. Refrigerate the chicken in the brine for 1 to 2 hours. If using table, sea, or Morton salt, use half as much.
- Remove the chicken, discard the brine, and pat the meat dry.
- Heat the oven to 425°F and coat a 9-by-12-inch baking dish with olive oil spray.
- Mix 3/4 teaspoon salt with the garlic powder, parsley, and paprika. Season the chicken and place it in the prepared dish.
- Spread mayonnaise over the top of each breast, then add the panko and Parmesan. Mist the topping with olive oil spray.
- Bake for 24 to 27 minutes, until the thickest part reaches 165°F. Serve with lemon wedges.
