Asian Grilled Salmon

Ingredients

  • 1 side fresh salmon, boned but skin on (about 3 pounds)
  • 2 tablespoons Dijon mustard
  • 3 tablespoons good soy sauce
  • 6 tablespoons good olive oil
  • 1/2 teaspoon minced garlic

Method

  1. Light charcoal briquettes in a grill and brush the grilling rack with oil.
  2. Cut the salmon crosswise into 4 equal pieces. Whisk together the mustard, soy sauce, olive oil, and garlic. Drizzle half the marinade over the salmon and let it sit for 10 minutes.
  3. Grill skin-side down for 4 to 5 minutes. Discard the used marinade, turn the salmon carefully, and grill another 4 to 5 minutes.
  4. Transfer to a plate, spoon the reserved marinade over the fish, and let it rest for 10 minutes. Remove the skin and serve.
