The Best Chocolate Mousse

Ingredients
- 1 3/4 cups cold heavy cream
- 1 large egg
- 2 large egg yolks
- 1/4 cup granulated sugar
- 1 teaspoon instant espresso powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon kosher salt
- 4 ounces good-quality bittersweet chocolate, chopped
- 4 ounces good-quality semisweet chocolate, chopped
Method
- Whisk 1 cup of the cream to soft peaks in a medium bowl and set aside.
- Combine the egg, yolks, sugar, espresso powder, vanilla, salt, and 1 tablespoon water in a heatproof bowl. Set it over gently simmering water without letting the bowl touch the water.
- Whisk constantly for 4 to 6 minutes, until pale, hot, and nearly doubled in volume. Remove from the heat and whisk about 2 minutes more to cool.
- Melt both chocolates in another heatproof bowl over the simmering water, stirring occasionally. Remove from the heat and stir for about 3 minutes to cool slightly.
- Whisk the egg mixture into the chocolate in three additions. Gently fold in the softly whipped cream in three additions.
- Divide among four 4-ounce ramekins and chill until firm, about 1 hour.
- Whip the remaining 3/4 cup cream to stiff peaks. Spoon it over the mousse and serve.
