Sugar Cookies

Ingredients
- 3 cups all-purpose flour
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup sugar
- 1 egg, beaten
- 1 tablespoon milk
- Powdered sugar, for rolling the dough
Method
- Sift the flour, baking powder, and salt together.
- Beat the butter and sugar in a stand mixer until pale and light. Mix in the egg and milk.
- With the mixer on low, gradually add the dry ingredients and continue mixing until the dough pulls away from the bowl.
- Split the dough in half, wrap each portion in waxed paper, and refrigerate for 2 hours.
- Heat the oven to 375°F. Dust the work surface and rolling pin with powdered sugar.
- Working with one chilled portion at a time, roll the dough 1/4 inch thick. Keep it moving to prevent sticking; if it softens, chill it beneath a cold baking sheet for 10 minutes.
- Cut out shapes and arrange them at least 1 inch apart on a greased, parchment-lined, or silicone-lined baking sheet.
- Bake for 7 to 9 minutes, rotating the sheet halfway through, until the edges just begin to brown.
- Cool on the baking sheet for 2 minutes, then move the cookies to a wire rack. Serve plain or decorate once cool.
