Strawberry Shortcake

Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 3 teaspoons baking powder
- 3 tablespoons sugar
- 6 tablespoons solid shortening
- 1 large egg
- About 3/4 cup milk
- 1/2 teaspoon vanilla extract
- 1 1/2 cups heavy cream, whipped
- 3/4 pound strawberries, washed, sliced, and macerated with a little sugar
Method
- Heat the oven to 400°F and grease an 8-inch cake pan.
- Sift the flour, salt, baking powder, and sugar into a large bowl.
- Cut in the shortening with a pastry blender or two forks.
- Lightly beat the egg in a measuring cup. Add enough milk to reach 7/8 cup total, then stir in the vanilla.
- Add the liquid mixture to the dry ingredients and stir just until combined.
- Spread the batter in the prepared pan and bake for about 20 minutes, until golden and a tester comes out clean.
- Serve wedges with whipped cream and macerated strawberries, or split the whole cake horizontally and fill it with the cream and berries.
