PB&J Bread Pudding

Ingredients

  • 12 thick slices white bread, or more as needed
  • 1 cup peanut butter, crunchy or smooth
  • 1 cup milk or unsweetened vanilla almond milk
  • 6 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon kosher salt
  • 1/2 cup white sugar (or Splenda), divided
  • 1 small basket strawberries, washed, hulled, and sliced or halved
  • 3/4 cup strawberry preserves or jam (can be sugar-free)
  • 1 tablespoon powdered sugar for dusting, or as needed (optional)

Method

  1. Preheat the oven to 350°F. Spray a 9x13-inch dish with nonstick buttery spray. Cut the bread into about 1-inch cubes.
  2. In a large bowl, whisk the peanut butter with the milk until fully blended. Whisk in the eggs, vanilla, salt, and 1/4 cup sugar. Add the bread cubes and gently stir until fully coated. Cover and refrigerate for about 20 minutes.
  3. Meanwhile, toss the strawberries with the remaining 1/4 cup sugar; set aside.
  4. Spoon about 2/3 of the bread mixture into the prepared pan in an even layer. Dollop half the strawberry jam over the top and spread it, then scatter half the strawberries (with their juice) on top. Top with the remaining bread mixture, then the remaining strawberries and juice. Cover the pan with foil.
  5. Bake for 15 minutes. Uncover and continue baking until just set, about 30 to 40 minutes more.
  6. Stir the remaining jam until smooth, then spread it over the bread pudding as soon as it comes out of the oven; let rest about 5 minutes so the jam forms a glaze. Dust with powdered sugar before serving.
