Ingredients

  • 1 18-ounce package chocolate sandwich cookies, such as Oreos
  • 1 stick (8 tablespoons) unsalted butter, melted
  • 1 5.9-ounce box instant chocolate pudding mix
  • 3 cups whole milk
  • 2 tablespoons black cocoa powder
  • 1 8-ounce block cream cheese, at room temperature
  • 3 cups heavy cream
  • 1 1/2 cups confectioners' sugar
  • Kosher salt

Method

  1. Reserve 15 cookies. Pulse the rest into fine crumbs in a food processor and set aside 1/2 cup of the crumbs. Mix the remaining crumbs with the melted butter, press them into a 9-by-13-inch dish, and chill for at least 10 minutes.
  2. Whisk the pudding mix, milk, and cocoa until smooth, about 2 minutes, then refrigerate.
  3. Beat 6 ounces of cream cheese until fluffy. Add 1 cup heavy cream, 1 cup confectioners' sugar, and a pinch of salt. Beat first on medium-low until thickening, then on medium-high until stiff peaks form.
  4. Spread the cream-cheese mixture over the crust. Press the 15 whole cookies into it in three rows of five, then spread the pudding over the cookies.
  5. Beat the remaining 2 ounces cream cheese until smooth. Add a pinch of salt, the remaining 2 cups heavy cream, and remaining 1/2 cup confectioners' sugar. Beat until thickened, then increase the speed and whip to stiff peaks.
  6. Spread the whipped cream over the pudding, sprinkle with the reserved crumbs, cover, and refrigerate for at least 4 hours or overnight before serving.
