No-Bake Cake Pops

Ingredients
- 12 Hawaiian sweet rolls, plus 2–3 more if needed for consistency
- 1 stick unsalted butter, softened
- 1 8-ounce package cream cheese, softened
- 1 1/2 cups confectioners' sugar
- 1 cup canned grated coconut in extra-heavy syrup
- 1/4 teaspoon salt
- 1/2 teaspoon coconut extract
- 1/4 teaspoon almond extract
- 2 11 1/2-ounce bags white chocolate chips
- Gel food coloring, optional
Method
- Pulse 12 sweet rolls in a food processor or blender until finely crumbled.
- Beat the butter and cream cheese for about 2 minutes, until creamy. Mix in the confectioners' sugar, coconut, salt, coconut extract, and almond extract.
- Combine the roll crumbs and frosting. If the mixture is too soft, blend and add 2–3 more rolls as needed.
- Roll into small balls and freeze for 15 minutes.
- Melt the white chocolate and tint it if desired. Dip each cake-pop stick into the chocolate, insert it into a cake ball, and freeze for 20 minutes.
- Remelt the chocolate, dip each pop completely, and return the pops to the freezer for about 20 minutes, until set.
