Fudge Brownies

Ingredients

  • Butter-flavored nonstick cooking spray
  • 1/4 cup unsalted butter, cut into pieces
  • 1 ounce unsweetened chocolate, chopped
  • 1 cup minus 2 tablespoons sifted cake flour
  • 1/2 cup unsweetened Dutch-process cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground cinnamon
  • Generous pinch of ground nutmeg
  • 1 1/4 cups granulated sugar
  • 1 large egg plus 2 large egg whites
  • 1 tablespoon vanilla extract
  • 3 tablespoons water

Method

  1. Position a rack in the center of the oven, heat to 350°F, and lightly coat a baking pan with cooking spray.
  2. Melt the butter and chopped chocolate together in a small saucepan over very low heat. Stir and set aside to cool.
  3. Whisk together the flour, cocoa, baking powder, salt, cinnamon, and nutmeg.
  4. Beat the sugar with the cooled chocolate mixture. Add the egg, egg whites, vanilla, and water and beat well.
  5. Add the dry ingredients and mix on low just until blended; do not overmix.
  6. Spread the thick batter in the prepared pan and bake for 22 to 25 minutes. The top should look dry, with a few crumbs near the edge and a slightly gooey center.
  7. Cool in the pan, then cut into squares.
