Easy Blueberry Buttermilk Cake

Ingredients
- 2 3/4 cups cake flour
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 1/4 cups sugar
- 4 tablespoons unsalted butter, softened
- 3/4 cup unsweetened applesauce
- 3/4 cup low-fat buttermilk
- 2 cups fresh or frozen blueberries
- 1 large egg, beaten
- 2 large egg whites
- 2 teaspoons vanilla extract
- Baking spray
Method
- Heat the oven to 325°F and coat a 13-by-9-inch baking pan with baking spray.
- Whisk the cake flour, baking soda, and salt in a large bowl.
- In another bowl, beat the sugar and butter for about 3 minutes. Beat in the egg and egg whites one at a time.
- Mix in the buttermilk, vanilla, and applesauce.
- Stir the wet mixture into the flour just until combined, then gently fold in the blueberries.
- Spread the batter in the prepared pan and bake for 30–32 minutes, until a toothpick comes out clean. Cool to room temperature before serving.
