Easy Berry Pie

Ingredients

  • 1 pint raspberries
  • 1 pint blueberries
  • 3 peaches
  • 1/4 cup plus 1 tablespoon sugar
  • 2 8-inch commercial piecrusts, refrigerated or defrosted frozen
  • 2 tablespoons unsalted butter
  • 1 egg yolk
  • 1 tablespoon water

Method

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper. On a lightly floured surface, press the two piecrusts together and roll out to a 14-inch round. Transfer to the parchment-lined baking sheet.
  2. Cut each peach into 8 slices (24 total). Gently fold the peaches and berries with 1/4 cup sugar to coat, being careful not to crush the berries. Spoon the fruit mixture into the center of the dough and spread out to about 10 inches from the center. Fold the edges of the dough up over the fruit, pleating as you go around.
  3. Whisk the egg yolk with the water. Brush the pleated edges with the egg wash and sprinkle with the remaining 1 tablespoon sugar. Dot the top with small pieces of butter.
  4. Bake for 30-35 minutes, until the edges are golden brown.
