Classic Lemon Bars

Ingredients
Crust
- Vegetable oil, for greasing
- 1 1/2 sticks unsalted butter, diced
- 2 cups all-purpose flour
- 1/4 cup packed light brown sugar
- 1/2 cup confectioners' sugar, plus more for garnish
- 1/4 teaspoon salt
Filling
- 4 large eggs
- 2 large egg yolks
- 2 cups granulated sugar
- 1/3 cup sifted all-purpose flour
- 1 teaspoon grated lemon zest
- 1 cup fresh lemon juice (from about 8 lemons)
Method
- Put a rack in the center of the oven and heat it to 350°F. Oil a 9-by-13-inch pan, line it with foil so 2 inches overhang the sides, and oil the foil.
- Pulse the butter, flour, brown sugar, confectioners' sugar, and salt in a food processor until a dough forms, about 1 minute.
- Press the dough evenly across the bottom and about 1/2 inch up the sides of the pan, closing any cracks. Bake until golden, about 25 minutes.
- Whisk the whole eggs, yolks, granulated sugar, and flour until smooth, then whisk in the lemon zest and juice.
- Reduce the oven to 300°F. Pour the filling over the warm crust and bake until just set, 30 to 35 minutes.
- Cool in the pan on a rack, then refrigerate until firm, at least 2 hours. Lift out by the foil, slice, and dust with confectioners' sugar.
